Ingredients

1 smoked, bone-in ham (about 10 pounds) 
1 jar Orange Marmalade 
½ jar Whole Seed Mustard 
4 tablespoons butter 
2 teaspoons fresh ground black pepper

Prep time: 1.5 hours (including tempering and resting)
Cook time: 2+ hours

1. Bring your ham out of the refrigerator to temper for 30-60 minutes before baking.  

2. Preheat your oven to 350 degrees. While the oven is heating, score the ham in a diamond pattern, about ¼ inch deep. Place the ham, flat-side down, on a rack, in a roasting pan. Add enough water to cover the bottom of the pan by ½-inch. Cover with aluminum foil and bake for 45 minutes. Continue cooking till the ham reaches 130 degrees, about 60 minutes more. Add more water to keep the pan from burning, if needed.   

3. While the ham is baking, place the remaining ingredients into a small sauce pot over medium-low heat. Whisk occasionally until the butter melts. Remove from heat and set aside. 

4. Increase the oven temperature to 400 degrees. Remove the aluminum foil and brush the ham with about 1/3 of the glaze and return to the oven, uncovered, for 15 minutes. Repeat every 15 minutes until all the glaze has been used and the ham has a beautiful golden crust. Remove from the oven and let rest at least 20 minutes before slicing.
