
Wheat & Malt Waffles

Ingredients
1 cup sliced strawberries
½ cup raspberries
½ jar American Spoon Red Raspberry Preserves
1½ cups American Spoon Wheat & Malt Pancake Mix
2 tablespoons sugar (optional)
1½ cups milk
2 eggs
1 tablespoon lemon juice
1 tablespoon butter, melted
American Spoon Maple Syrup

Preparation time: 10 minutes
- 1. Combine the strawberries, raspberries, and Red Raspberry Preserves in a bowl and mix to combine. While mixing, gently mash the fruit to a chunky compote consistency. Set aside to macerate while you make the waffles.
- 2. Whisk together the pancake mix, sugar, milk, eggs, lemon juice, and melted butter. Mix gently until there are no lumps, being careful not to overbeat.
- 3. Heat a waffle iron, spoon in batter, and cook according to the manufacturer’s directions. Give the berry compote a good stir before spooning over warm waffles. Top with maple syrup.
