Wheat & Malt Waffles

Ingredients
- 1½ cups American Spoon Wheat & Malt Pancake Mix
- 2 tablespoons sugar (optional)
- 1½ cups milk
- 2 eggs
- 1 tablespoon lemon juice
- 1 tablespoon butter, melted
- 1 cup sliced strawberries
- ½ cup raspberries
- ½ jar Red Raspberry preserves
- American Spoon Maple Syrup

Preparation time: 10 minutes
- 1. Combine the strawberries, raspberries, and rasperry preserves in a bowl and mix to combine. While mixing, gently mash the fruit to a chunky compote consistency. Set aside to macerate while you make the waffles.
- 2. Whisk together the pancake mix, sugar, milk, lemon juice, eggs, and melted butter. Mix gently until there are no lumps, being careful not to overbeat.
- 3. Heat a waffle iron, spoon in batter, and cook according to the manufacturer’s directions. Give the berry compote a good stir before spooning over warm waffles. Top with maple syrup.
