Red Haven Peach Spoon Cake
Ingredients
2 cups peeled and sliced peaches
1 jar American Spoon Red Haven Peach Preserves
1 teaspoon cornstarch
3/4 cup whole milk
3/4 cup unsalted butter (1 1/2 sticks), melted
2/3 cup brown sugar
1 bag American Spoon Biscuit Mix

Preparation time: 10 minutes
1. Heat oven to 350 degrees. Grease an 8-inch cake pan or baking dish and set aside.
2. In a bowl, mix the sliced peaches, peach preserves, and cornstarch. Set aside to macerate.
3. In a separate bowl, whisk together the milk, melted butter, and brown sugar. Stir in the biscuit mix until just combined.
4. Transfer the batter to the prepared baking pan. Smooth the batter into an even layer, then spoon the peach and preserve mixture over top.
5. Bake for 35–45 minutes, or until a tester inserted into the middle of the cake comes out clean. (Juicier peaches may require the longer bake time.)
6. Let the cake cool slightly before spooning into bowls. Serve with ice cream.
