
Buttermilk Biscuits and Honey
Ingredients
2 cups all-purpose flour
¼ cup sugar
1 tablespoon baking powder
1 teaspoon kosher salt
1 stick unsalted butter, cold and cut into cubes
1⅓ cup cream, cold
1 jar Lemon Honey or Star Thistle Honey
Instructions
1. Preheat oven to 450. Whisk together the flour, sugar, baking powder, and salt in a small bowl. Add butter cubes and toss to coat with the flour mixture. Using your fingers or a dough blender, cut the butter and flour together, until pea sized. Mix the cold cream in with a fork, then gently bring the dough together using your fingers.
2. Turn dough out onto a well-floured surface. Flour the top of the dough and press out to a rectangle about ¾” thick. The dough will feel wet and sticky, so use enough flour to prevent it sticking. Cut the dough into four equal pieces. Stack the pieces and gently roll to a ¾“ to 1” thick rectangle. Dust with flour as needed. Using a 3” biscuit cutter, cut out seven biscuits.
3. Place biscuits on a parchment lined 8x8 baking tray or 9-inch cake pan. You want the biscuits touching their neighbors, so crowd the pan. Place in oven and turn heat down to 350. Bake for 17-20 minutes, until golden and cooked through.
4. Drizzle your choice of honey on top and allow to cool slightly before enjoying.
