Ingredients

For the Filling
12 cups peeled and thinly sliced apples
1 ½ tablespoons cornstarch
1 ½ tablespoons brown sugar
2 jars American Spoon Apple & Cinnamon Preserves

For the Topping
1 bag American Spoon Biscuit Mix
1 tablespoon brown sugar
1 stick (4 ounces) very cold butter cut into small cubes, plus 2 tablespoons cubed butter
¾ cup buttermilk

Instructions

Preparation time: 1 hour

1. Heat oven to 400 degrees.
2. To make the filling, add the apple slices to a large bowl. Separately, toss the brown sugar and the corn starch to combine, then add to the apples. Mix well, then add the apple preserves and toss again till everything is well incorporated. Set it aside. 
3. In a separate bowl, whisk the biscuit mix and brown sugar. Using a pastry cutter, fork, or your fingers, cut in the stick of cold butter till you have coarse, pea-sized crumbs (reserving the remaining 2 tablespoons). Add the buttermilk and mix till just combined. 
4. Lightly grease a 9x13-inch pan (or any 3 ½ to 4-quart baking dish). Add the apples. Scatter the reserved butter over top. Using a spoon, drop dollops of the cobbler topping evenly over the apples. Cover with aluminum foil and place in the oven. Reduce oven temperature to 350 degrees and bake for 30 minutes. Remove foil and bake for another 15 minutes, or until the cobbler topping is golden brown and the filling is bubbling. 
5. Let cool slightly before serving with vanilla ice cream.
